Nestled in the Heart of the Choctaw Nation
At Kiamichi Mountain Distillery, every bottle tells the story of a meticulous craft. From grain to glass, we invite you to explore the time-honored steps that make our spirits unique.
First Steps
This is how we start
Mashing
Mashing involves mixing the malted grains with hot water to extract the sugars. The result is a sweet liquid called wort, which serves as the foundation for fermentation.
Fermentation
During fermentation, yeast is added to the wort, converting the sugars into alcohol. This stage defines the core flavors and alcohol content of the spirit.
Distillation
Distillation purifies the alcohol by heating the fermented liquid and collecting the vapor, which is then condensed back into liquid form. This process increases the alcohol concentration and refines the flavor.
Maturation
Maturation is the aging process where the spirit is stored in barrels, typically made of oak. Over time, it absorbs flavors from the wood, developing complexity and character.
Preservation
Preservation involves bottling and storing the spirits under optimal conditions to maintain their quality and flavor, ensuring that each bottle remains true to its crafted taste.
